Harvest Apple Pancakes and Halloween Fun
We had such a fun and safe at home Halloween this weekend with our family. Before I picked the boys up from school, I made up a little homemade feast of apple pancakes, cider donuts, and popcorn. Since our usual plans for the holiday had been cancelled because of COVID, I wanted to have a fun way at home to celebrate with the family.
Our family tradition is to carve our pumpkins the night before while watching It’s the Great Pumpkin, Charlie Brown. We continued that fun tradition as it snowed outside here in Connecticut—yes, SNOW! Big white fluffy flakes fell down and accumulated while we were nice and cozy inside by the fire. I saved the fake cobweb decorating for the boys because they like to go crazy with that!

Harvest Apple Pancakes Recipe
For Pancakes:
1 1/2 C flour
1 1/2 t baking powder
1/2 t salt
3T sugar
Mix dry ingredients first, then make a well at the bottom of the bowl and add the wet ingredients.
1 egg
1 C whole milk
4T melted butter
For apple topping:
2-3 small apples cored and wesliced
1T sugar
1/2 t cinnamon
In a small bowl, let sliced apples sit for 15 minutes in sugar and cinnamon. In a small pan, add a little water and simmer apples until they make a caramel glaze.
*For an extra flourish, I added some maple oatmeal and maple syrup when I plated the pancakes.
I hope you all got to do something fun with your families for Halloween! We enjoyed our festive weekend at home. The snow and using the fireplace for the the first time definitely got my mind thinking about Thanksgiving and Christmas! I’m so excited to start planning for the holidays!
